Description

Pecan Pie Lasagna is a decadent dessert that layers creamy filling, a crunchy crust, and rich pecan pie flavors. It’s a fun twist on the classic pecan pie with a lasagna-style presentation.


Ingredients

  • 1 box of no-bake lasagna noodles
  • 1 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup whipped topping (such as Cool Whip)

Instructions

  1. Boil the lasagna noodles according to the package instructions, drain and set aside.
  2. In a large bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold in the whipped topping to create the creamy filling.
  4. In a saucepan, melt the butter and brown sugar over medium heat, stirring until the sugar dissolves.
  5. Stir in the corn syrup, cinnamon, nutmeg, and salt, and bring the mixture to a simmer for about 3 minutes.
  6. Add the chopped pecans to the caramel mixture and stir to combine. Remove from heat.
  7. To assemble the lasagna, spread a layer of the cream cheese filling in the bottom of a 9×13 inch pan.
  8. Top with a layer of lasagna noodles, followed by a layer of the pecan caramel mixture.
  9. Repeat the layers until all ingredients are used, finishing with the pecan caramel mixture on top.
  10. Refrigerate the lasagna for at least 3 hours before serving to allow the layers to set.
  11. Serve chilled and enjoy!

Notes

  • You can substitute the whipped topping with homemade whipped cream if preferred.
  • For a more intense pecan flavor, toast the pecans before adding them to the caramel mixture.
  • This dessert can be made a day ahead and stored in the fridge until ready to serve.
