These rich, chewy Peanut Butter Cookie Bites are packed with creamy peanut butter and melty chocolate chips, baked into the perfect handheld treat using a mini muffin tin.

- 2¾ cups all-purpose flour
- 1½ teaspoons baking soda
- 1 teaspoon baking powder
- ½ cup unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1½ teaspoons vanilla extract
- 1½ cups chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with paper liners.
- In a medium bowl, whisk together flour, baking soda, and baking powder.
- In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. Fold in most of the chocolate chips.
- Scoop dough into mini muffin cups, filling each about ¾ full. Top with a few extra chocolate chips.
- Bake for 10–12 minutes, or until edges are golden and centers are set.
- Let cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake — they should still look soft in the center when done.
- Store in an airtight container for up to 4 days.
- Chill dough slightly for thicker, puffier bites.
