These rich, chewy Peanut Butter Cookie Bites are packed with creamy peanut butter and melty chocolate chips, baked into the perfect handheld treat using a mini muffin tin.


Ingredients

  • 2¾ cups all-purpose flour
  • 1½ teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with paper liners.
  2. In a medium bowl, whisk together flour, baking soda, and baking powder.
  3. In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Fold in most of the chocolate chips.
  5. Scoop dough into mini muffin cups, filling each about ¾ full. Top with a few extra chocolate chips.
  6. Bake for 10–12 minutes, or until edges are golden and centers are set.
  7. Let cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.

Notes

  • Do not overbake — they should still look soft in the center when done.
  • Store in an airtight container for up to 4 days.
  • Chill dough slightly for thicker, puffier bites.
