Peach Cobbler Pound Cake is a moist, buttery cake layered with sweet peaches and a cinnamon-sugar topping that mimics the flavors of a classic peach cobbler.

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups peeled and sliced fresh peaches (or canned, drained)
- 1/2 teaspoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- Alternately add flour mixture and sour cream to the butter mixture, beginning and ending with flour mixture. Mix until just combined.
- Fold in sliced peaches gently.
- Pour batter into prepared pan.
- In a small bowl, combine cinnamon and brown sugar; sprinkle evenly over the batter.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use fresh peaches for best flavor; canned peaches work well too.
- Serve with whipped cream or vanilla ice cream for a special treat.
- Store cake covered at room temperature for up to 3 days.
- Can substitute sour cream with Greek yogurt.
