Description

Peach Cobbler Pound Cake is a moist, buttery cake layered with sweet peaches and a cinnamon-sugar topping that mimics the flavors of a classic peach cobbler.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups peeled and sliced fresh peaches (or canned, drained)
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract.
  6. Alternately add flour mixture and sour cream to the butter mixture, beginning and ending with flour mixture. Mix until just combined.
  7. Fold in sliced peaches gently.
  8. Pour batter into prepared pan.
  9. In a small bowl, combine cinnamon and brown sugar; sprinkle evenly over the batter.
  10. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use fresh peaches for best flavor; canned peaches work well too.
  • Serve with whipped cream or vanilla ice cream for a special treat.
  • Store cake covered at room temperature for up to 3 days.
  • Can substitute sour cream with Greek yogurt.
