Filling
- 2 cups fresh peaches, peeled and chopped
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Assembly and Frying
- 8–10 egg roll wrappers
- Oil for frying (neutral oil with high smoke point)
Finishing Touch
- Powdered sugar, for dusting
- Pinch of cinnamon, for dusting
Instructions
- Prepare the Peach Filling: Start by peeling and chopping fresh peaches into small pieces. In a skillet, melt butter over medium heat, then add the peaches, brown sugar, cinnamon, nutmeg, vanilla extract, and lemon juice. Cook gently until the mixture thickens and the fruit softens but still holds some shape, about 5-7 minutes.
- Cool the Filling: Transfer the cooked peach mixture into a bowl and let it cool completely. This step prevents the egg roll wrappers from becoming soggy and makes the rolling process easier.
- Assemble the Egg Rolls: Lay out one egg roll wrapper flat, with one corner pointing toward you. Spoon 2-3 tablespoons of the cooled peach filling near the corner closest to you. Fold the corner over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water.
- Fry the Egg Rolls: Heat oil in a deep pan to 350°F (175°C). Carefully add the egg rolls a few at a time to avoid overcrowding. Fry until golden brown on all sides, about 2-3 minutes per batch. Remove and drain on paper towels.
- Serve with a Dusting of Sugar: Once slightly cooled but still warm, dust the Peach Cobbler Egg Rolls with powdered sugar mixed with a pinch of cinnamon for a festive and flavorful finish.
Notes
- Use firm-ripe peaches for the best texture as they hold their shape better during cooking.
- Don’t overfill the egg rolls to avoid bursting wrappers and ensure crispiness.
- Keep egg roll wrappers covered with a damp cloth while assembling to prevent drying out.
- Maintain consistent oil temperature to ensure even browning and less oily egg rolls.
- Drain fried egg rolls well on paper towels or a wire rack for optimal crispiness.
