  • 1.5 pounds baby potatoes, halved
  • 4 tablespoons olive oil, divided
  • 3 tablespoons unsalted butter, divided
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese

Dipping Sauce:

  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1.5 tablespoons lemon juice (juice of 1/2 lemon)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt (or to taste)
  • 2 tablespoons fresh dill, minced
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons fresh chives, minced


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine melted butter, 2 tablespoons olive oil, parmesan, garlic powder, onion powder, oregano, paprika, salt, and pepper.
  3. Pour the mixture onto the baking sheet and spread evenly. Place halved potatoes cut-side down into the mixture.
  4. Drizzle the remaining olive oil over the tops of the potatoes.
  5. Bake for 35–40 minutes, until potatoes are tender inside and golden brown underneath.
  6. Let rest for 5 minutes before lifting the potatoes to reveal the crispy parmesan crust.
  7. For the dip, whisk together sour cream, mayonnaise, lemon juice, zest, garlic powder, onion powder, salt, dill, parsley, and chives until smooth. Chill until serving.
  8. Serve potatoes warm with the dipping sauce on the side.

Notes

  • Use freshly grated parmesan for the crispiest texture.
  • Don’t move the potatoes while baking — that helps form the crust.
  • Use baby yellow or red potatoes for the best results.
