Dipping Sauce:
- 3/4 cup sour cream
- 1/4 cup mayonnaise
- 1.5 tablespoons lemon juice (juice of 1/2 lemon)
- 1 tablespoon lemon zest
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt (or to taste)
- 2 tablespoons fresh dill, minced
- 2 tablespoons fresh parsley, minced
- 2 tablespoons fresh chives, minced
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine melted butter, 2 tablespoons olive oil, parmesan, garlic powder, onion powder, oregano, paprika, salt, and pepper.
- Pour the mixture onto the baking sheet and spread evenly. Place halved potatoes cut-side down into the mixture.
- Drizzle the remaining olive oil over the tops of the potatoes.
- Bake for 35–40 minutes, until potatoes are tender inside and golden brown underneath.
- Let rest for 5 minutes before lifting the potatoes to reveal the crispy parmesan crust.
- For the dip, whisk together sour cream, mayonnaise, lemon juice, zest, garlic powder, onion powder, salt, dill, parsley, and chives until smooth. Chill until serving.
- Serve potatoes warm with the dipping sauce on the side.
