Description

A refreshing Orange Creamsicle Poke Cake made with soft vanilla cake infused with vibrant orange gelatin and topped with a fluffy layer of whipped topping. This nostalgic dessert is creamy, citrusy, and perfect for warm weather gatherings or make ahead celebrations.

  • 1 box vanilla cake mix, 15.25 ounces
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 3 ounces orange gelatin powder
  • 1 cup boiling water
  • 1/2 cup cold water
  • 8 ounces whipped topping
  • 1 medium fresh orange, for garnish
  • 1 teaspoon orange zest


Instructions

  1. Preheat oven to 350 degrees F and lightly grease a 9×13 baking pan.
  2. In a large mixing bowl, combine vanilla cake mix, eggs, vegetable oil, and milk. Mix until smooth and fully incorporated.
  3. Pour the batter into the prepared pan and spread evenly.
  4. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  5. Remove from oven and allow the cake to cool for about 10 minutes.
  6. Using the handle of a wooden spoon, poke evenly spaced holes across the entire surface of the cake.
  7. In a bowl, dissolve the orange gelatin powder in 1 cup boiling water, stirring until completely dissolved. Stir in 1/2 cup cold water.
  8. Slowly pour the gelatin mixture evenly over the cake, allowing it to soak into the holes.
  9. Refrigerate the cake for at least 2 hours until fully chilled and set.
  10. Spread whipped topping evenly over the surface. Garnish with orange zest and slices before serving.
