Description

Crispy golden onion pakoras made with spiced chickpea flour batter and thinly sliced onions, fried until crunchy on the outside and tender inside. Perfect as a snack or appetizer with lemon wedges and chutney.


Ingredients

  • 3 medium onions, thinly sliced
  • 1 cup chickpea flour
  • 2 tablespoons rice flour
  • 1 small green chili, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • About 1/3 cup water
  • About 2 cups oil for frying


Instructions

  1. Heat oil in a deep frying pan over medium heat until hot but not smoking.
  2. In a large mixing bowl, combine sliced onions, chickpea flour, rice flour, green chili, cilantro, turmeric, cumin, coriander, salt, and baking soda.
  3. Gradually add water, mixing until a thick batter forms that evenly coats the onions.
  4. Take small handfuls of the mixture and carefully drop them into the hot oil without overcrowding the pan.
  5. Fry for 3 to 4 minutes per side, turning occasionally, until golden brown and crisp.
  6. Remove with a slotted spoon and drain on paper towels.
  7. Serve hot with lemon wedges or your favorite dipping sauce.
