Description

One-Skillet Honey BBQ Chicken & Rice is a flavorful and easy-to-make dish combining tender chicken breasts, sweet and tangy honey BBQ sauce, and perfectly cooked rice, all cooked together in one pan for a quick weeknight meal.


Ingredients

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1/2 cup honey BBQ sauce
  • 1/2 cup water
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper, then sear in the skillet until browned on both sides (about 3-4 minutes per side). Remove and set aside.
  3. In the same skillet, add diced onion and cook until softened, about 2-3 minutes.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Stir in rice, chicken broth, water, and honey BBQ sauce; mix well.
  6. Place the chicken breasts on top of the rice mixture.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and chicken is done.
  8. Remove from heat and let stand, covered, for 5 minutes.
  9. Garnish with chopped parsley or green onions before serving.

Notes

  • Use boneless chicken thighs for juicier meat.
  • Adjust honey BBQ sauce quantity to your preferred sweetness level.
  • Can be made gluten-free by choosing gluten-free BBQ sauce.
  • Add vegetables like bell peppers or peas for extra nutrition.
