- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 2 cups broccoli florets
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook for 1-2 minutes, until fragrant.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, add chicken broth and bring to a simmer.
- Add broccoli florets and cook for 3-4 minutes until tender.
- Stir in heavy cream, lemon juice, salt, pepper, and red pepper flakes (if using). Bring to a simmer and cook for another 2 minutes.
- Add shrimp back to the skillet and toss everything together.
- Sprinkle with Parmesan cheese (if using) and serve immediately.
Notes
- For a lighter version, you can substitute the heavy cream with coconut milk or a low-fat alternative.
- Serve with rice or pasta for a more filling meal.
- You can also add other vegetables, such as bell peppers or spinach, to customize the dish.
