Description

A rich and comforting one-pot dish made with tender chickpeas simmered in a silky, creamy sauce with herbs and gentle heat, perfect for an easy and satisfying meatless meal.

Ingredients

  • Cooked chickpeas: 3 cups, drained and rinsed
  • Olive oil: 2 tablespoons
  • Onion: 1 medium, finely chopped
  • Garlic cloves: 4 cloves, minced
  • Vegetable broth: 1 cup
  • Heavy cream: 1 cup
  • Dried oregano: 1 teaspoon
  • Red pepper flakes: 1/2 teaspoon
  • Salt: 3/4 teaspoon
  • Black pepper: 1/2 teaspoon

Instructions

  1. Heat a large pot over medium heat and add the olive oil.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the minced garlic, dried oregano, and red pepper flakes, cooking until fragrant.
  4. Add the cooked chickpeas and vegetable broth, then bring to a gentle simmer.
  5. Let the mixture simmer for about 5 minutes, stirring occasionally.
  6. Pour in the heavy cream and reduce heat to low.
  7. Simmer gently until the sauce thickens and coats the chickpeas.
  8. Season with salt and black pepper, then remove from heat and serve warm.

Notes

  • Simmer gently to keep the sauce smooth and creamy.
  • Stir occasionally to prevent sticking.
  • Add a splash of broth when reheating if the sauce thickens too much.
