Description

A bold and creamy one pot pasta inspired by classic chicken fajitas, made with tender chicken, colorful bell peppers, smoky seasoning, and melty cheese for an easy comfort dinner.


Ingredients

  • 3 tablespoons olive oil
  • 2 medium chicken breasts, cut into strips or bite-size pieces
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons fajita seasoning
  • 1 teaspoon kosher salt
  • 4 cloves garlic, minced
  • 3 cups chicken stock
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 8 ounces dried pasta
  • 1/4 cup cream cheese
  • 1/4 cup minced fresh cilantro
  • 1/2 cup shredded Mexican blend cheese


Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Add the chicken pieces and cook until lightly browned.
  3. Stir in the sliced bell peppers and onion, cooking until softened.
  4. Add fajita seasoning, kosher salt, and minced garlic, stirring until fragrant.
  5. Pour in the chicken stock and fire-roasted diced tomatoes, then add the dried pasta.
  6. Bring to a simmer and cook, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  7. Lower the heat and stir in the cream cheese until fully melted and creamy.
  8. Add the shredded Mexican blend cheese and mix until melted.
  9. Remove from heat, stir in fresh cilantro, and serve warm.

Notes

  • Stir the pasta occasionally to prevent sticking.
  • Add a splash of chicken stock if the sauce becomes too thick.
  • Adjust seasoning at the end to taste.
