A bold and creamy one pot pasta inspired by classic chicken fajitas, made with tender chicken, colorful bell peppers, smoky seasoning, and melty cheese for an easy comfort dinner.

- 3 tablespoons olive oil
- 2 medium chicken breasts, cut into strips or bite-size pieces
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 large yellow onion, thinly sliced
- 2 tablespoons fajita seasoning
- 1 teaspoon kosher salt
- 4 cloves garlic, minced
- 3 cups chicken stock
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 8 ounces dried pasta
- 1/4 cup cream cheese
- 1/4 cup minced fresh cilantro
- 1/2 cup shredded Mexican blend cheese
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat.
- Add the chicken pieces and cook until lightly browned.
- Stir in the sliced bell peppers and onion, cooking until softened.
- Add fajita seasoning, kosher salt, and minced garlic, stirring until fragrant.
- Pour in the chicken stock and fire-roasted diced tomatoes, then add the dried pasta.
- Bring to a simmer and cook, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Lower the heat and stir in the cream cheese until fully melted and creamy.
- Add the shredded Mexican blend cheese and mix until melted.
- Remove from heat, stir in fresh cilantro, and serve warm.
Notes
- Stir the pasta occasionally to prevent sticking.
- Add a splash of chicken stock if the sauce becomes too thick.
- Adjust seasoning at the end to taste.
