Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1½ teaspoons salt
  • 1½ cups warm water
  • 2 tablespoons olive oil, plus more for brushing
  • 4 cloves minced garlic
  • 1 tablespoon fresh rosemary, chopped
  • Sea salt flakes, for garnish


Instructions

  1. Place a Dutch oven in the oven and preheat to 450°F (232°C).
  2. In a large bowl, mix flour, yeast, salt, and rosemary. Stir in warm water and olive oil until a shaggy dough forms. Fold in minced garlic. Cover and let rise for 12–18 hours.
  3. Transfer dough to floured parchment paper, shape into a round loaf, and let rise uncovered for 30–45 minutes.
  4. Score the top with a sharp knife and place the dough with parchment into the preheated Dutch oven.
  5. Bake covered for 30 minutes, then uncovered for 10–15 minutes until deep golden brown.
  6. Remove from oven, brush with olive oil, and sprinkle with sea salt flakes. Cool slightly before slicing.
  7. Serve warm with butter or olive oil.
