Ingredients
Scale
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon active dry yeast
- 1 tablespoon ground cinnamon
- 1 cup raisins
- 1–2 teaspoons fresh orange zest
- 1 1/2 cups lukewarm water (105°F–115°F)
- 2 tablespoons brown sugar
Instructions
- In a large mixing bowl, combine flour, salt, yeast, cinnamon, and brown sugar. Stir well.
- Add raisins and orange zest. Mix to distribute evenly.
- Pour in lukewarm water and stir with a wooden spoon until a shaggy dough forms.
- Cover the bowl with plastic wrap or a clean towel and let rise at room temperature for 12–18 hours.
- After rising, turn the dough onto a floured surface and shape it into a round loaf.
- Place on parchment paper and preheat oven to 450°F with a Dutch oven inside.
- When ready, carefully place the dough (on parchment) into the hot Dutch oven. Cover and bake for 30 minutes.
- Remove lid and bake uncovered for another 10–15 minutes until golden and crusty.
- Let cool completely on a wire rack before slicing.
Notes
- Use day-old or slightly dry raisins for better texture, or soak in warm water beforehand.
- Zest the orange directly over the bowl to capture essential oils for more flavor.
- Bake in a heavy oven-safe pot if you don’t have a Dutch oven.
