- 2 cups ricotta cheese
- 1 cup mascarpone cheese
- 1 cup powdered sugar

- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios (optional)
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9×9-inch baking dish to form the crust. Refrigerate for 10 minutes to set.
- In a separate bowl, beat together ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fold in mini chocolate chips and cinnamon (if using) until evenly distributed.
- Spread the cannoli filling evenly over the graham cracker crust.
- Top with chopped pistachios (optional) and additional chocolate chips if desired.
- Refrigerate for at least 3 hours or until set. Slice and serve chilled.

- For a firmer texture, refrigerate overnight.
