A creamy and refreshing no bake blueberry cheesecake with a buttery biscuit crust and a sweet tangy blueberry topping.
Ingredients

- 200g digestive biscuits
- 100g butter, melted
- 400g cream cheese, softened
- 100g powdered sugar
- 1 tsp vanilla extract
- 200ml heavy cream
- 200g blueberries
- 50g sugar
- 1 tbsp lemon juice
Instructions
- Crush the digestive biscuits and mix with melted butter.
- Press into a pan and chill.
- Beat cream cheese, sugar, and vanilla until smooth.
- Whip cream and fold into mixture.
- Spread filling over crust.
- Cook blueberries with sugar and lemon juice until thickened, then cool.
- Spread topping over cheesecake.
- Chill for at least 4 hours before serving.

- Chill overnight for best results
- Use fresh blueberries for brighter flavor
- Slice with a warm knife for clean edges
