Description

A creamy and refreshing no bake blueberry cheesecake with a buttery biscuit crust and a sweet tangy blueberry topping.


Ingredients

Scale
  • 200g digestive biscuits
  • 100g butter, melted
  • 400g cream cheese, softened
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • 200g blueberries
  • 50g sugar
  • 1 tbsp lemon juice


Instructions

  1. Crush the digestive biscuits and mix with melted butter.
  2. Press into a pan and chill.
  3. Beat cream cheese, sugar, and vanilla until smooth.
  4. Whip cream and fold into mixture.
  5. Spread filling over crust.
  6. Cook blueberries with sugar and lemon juice until thickened, then cool.
  7. Spread topping over cheesecake.
  8. Chill for at least 4 hours before serving.

  • Use fresh blueberries for brighter flavor
  • Slice with a warm knife for clean edges
