Description
Mexican flavors meet crispy perfection in these beef and cheese filled tortilla rolls that fry up golden and delicious.
Ingredients
Scale
- 1 pound lean ground beef
- 1 packet taco seasoning mix
- 4 large flour tortilla wraps
- ½ cup yellow onion, finely diced
- ½ cup green bell pepper, chopped
- 1 can diced tomatoes with green chilies
- Small handful of crisp iceberg lettuce, shredded
- 1 cup warm nacho cheese sauce
- ½ cup sour cream
- ½ cup nacho cheese Doritos, crushed into bits
Instructions
- Heat a large skillet over medium-high heat and cook the ground beef, breaking it up as it browns. Drain excess fat.
- Add the diced onion and green bell pepper. Cook for about 4 minutes until softened.
- Sprinkle taco seasoning over the mixture and stir well. Cook for 1 more minute.
- In a separate bowl, mix the nacho cheese sauce with the diced tomatoes and chilies.
- Lay out the tortillas flat and spread a stripe of the cheese mixture down the center of each.
- Spoon the seasoned beef mixture over the cheese. Add dollops of sour cream, shredded lettuce, and crushed Doritos.
- Fold in the sides of each tortilla, then roll up tightly from bottom to top.
- Heat a clean skillet over medium heat. Place the rolls seam-side down and cook, turning occasionally, until all sides are golden and crispy.
- Let cool for a minute, slice if desired, and serve warm.
Notes
- Warm tortillas before rolling to avoid tearing.
- Use plant-based beef or beans for a vegetarian option.
- Bake at 400°F for a lighter, oil-free version.
- Refrigerate pre-rolled tortillas up to 24 hours before cooking.
