Description

Mexican flavors meet crispy perfection in these beef and cheese filled tortilla rolls that fry up golden and delicious.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 packet taco seasoning mix
  • 4 large flour tortilla wraps
  • ½ cup yellow onion, finely diced
  • ½ cup green bell pepper, chopped
  • 1 can diced tomatoes with green chilies
  • Small handful of crisp iceberg lettuce, shredded
  • 1 cup warm nacho cheese sauce
  • ½ cup sour cream
  • ½ cup nacho cheese Doritos, crushed into bits

Instructions

  1. Heat a large skillet over medium-high heat and cook the ground beef, breaking it up as it browns. Drain excess fat.
  2. Add the diced onion and green bell pepper. Cook for about 4 minutes until softened.
  3. Sprinkle taco seasoning over the mixture and stir well. Cook for 1 more minute.
  4. In a separate bowl, mix the nacho cheese sauce with the diced tomatoes and chilies.
  5. Lay out the tortillas flat and spread a stripe of the cheese mixture down the center of each.
  6. Spoon the seasoned beef mixture over the cheese. Add dollops of sour cream, shredded lettuce, and crushed Doritos.
  7. Fold in the sides of each tortilla, then roll up tightly from bottom to top.
  8. Heat a clean skillet over medium heat. Place the rolls seam-side down and cook, turning occasionally, until all sides are golden and crispy.
  9. Let cool for a minute, slice if desired, and serve warm.

Notes

  • Warm tortillas before rolling to avoid tearing.
  • Use plant-based beef or beans for a vegetarian option.
  • Bake at 400°F for a lighter, oil-free version.
  • Refrigerate pre-rolled tortillas up to 24 hours before cooking.
