Description

A hearty Mustard Sausage Tray Bake made with juicy pork sausages, roasted baby potatoes, tender carrots, and red onion tossed in a tangy whole grain mustard and honey glaze. Everything roasts together on one tray for a comforting and flavorful dinner.

  • 1 1/2 pounds baby potatoes, halved
  • 3 medium carrots, sliced into thick rounds
  • 1 large red onion, cut into wedges
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat oven to 425 degrees F.
  2. In a large mixing bowl, whisk together olive oil, whole grain mustard, honey, minced garlic, dried thyme, salt, and black pepper.
  3. Place halved baby potatoes, sliced carrots, and red onion wedges into a large roasting tray.
  4. Add the pork sausages to the tray.
  5. Pour the mustard mixture over everything and toss gently to coat evenly.
  6. Spread ingredients into a single layer to ensure proper roasting.
  7. Roast for 35 to 40 minutes, turning the sausages halfway through cooking, until sausages are browned and vegetables are tender with caramelized edges.
  8. Remove from oven and let rest for 5 minutes before serving.
