- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 2 ripe bananas, mashed
- 1 cup grated carrots
- 2/3 cup light brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine the mashed bananas, grated carrots, brown sugar, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped nuts and raisins.
- Divide the batter evenly among the muffin cups.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can substitute whole wheat flour for half of the all-purpose flour for a healthier option.
- Feel free to add shredded coconut or chopped apple for extra texture.
- Store in an airtight container for up to 3 days or freeze for longer storage.
