Scale
- 6 ounces dark chocolate, chopped
- ½ cup unsalted butter
- 2 large eggs
- 2 large egg yolks
- ¼ cup granulated sugar
- ¼ cup all-purpose flour
- 1 teaspoon vanilla extract
- Pinch of salt
- ¼ cup chopped pistachios
Instructions
- Preheat oven to 425°F (220°C). Grease and flour four small ramekins.
- Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
- In a separate bowl, whisk eggs, yolks, and sugar until light and fluffy.
- Gradually add melted chocolate mixture to eggs while whisking. Stir in vanilla and salt.
- Fold in flour gently until combined and smooth.
- Pour batter evenly into prepared ramekins and place on a baking tray.
- Bake 11–13 minutes until edges are set but centers are soft.
- Let rest 1 minute, then invert onto plates. Top with chopped pistachios and powdered sugar before serving.
Notes
- Use high-quality dark chocolate for best flavor.
- Grease ramekins well to prevent sticking.
- Do not overbake or the centers will lose their molten texture.
- Batter can be made ahead and chilled until ready to bake.
