Description

These rich and fudgy mint brownies are topped with a creamy mint frosting and a smooth chocolate ganache, making them a decadent treat perfect for chocolate and mint lovers.


Ingredients

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup (60g) unsalted butter, softened (for mint layer)
  • 2 cups (240g) powdered sugar (for mint layer)
  • 2 tbsp milk (for mint layer)
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • 3/4 cup (130g) semi-sweet chocolate chips (for ganache)
  • 1/4 cup (60g) heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla extract; mix until smooth.
  3. Stir in cocoa powder, flour, salt, and baking powder until just combined.
  4. Pour the batter into the prepared pan and bake for 20–25 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
  5. For the mint layer, beat softened butter until creamy. Gradually add powdered sugar, milk, and peppermint extract, and mix until smooth. Add green food coloring if using.
  6. Spread mint frosting evenly over the cooled brownies. Chill in the refrigerator for 30 minutes.
  7. For the ganache, heat heavy cream until just boiling and pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
  8. Pour ganache over the mint layer and spread evenly. Chill again until the ganache is set.
  9. Cut into squares and serve.

Notes

  • You can use mint extract instead of peppermint for a milder flavor.
  • Chill brownies before slicing for cleaner cuts.
  • Store in the refrigerator for up to 5 days.
