- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup (40g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 cup (60g) unsalted butter, softened (for mint layer)
- 2 cups (240g) powdered sugar (for mint layer)
- 2 tbsp milk (for mint layer)
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 3/4 cup (130g) semi-sweet chocolate chips (for ganache)
- 1/4 cup (60g) heavy cream (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together melted butter and sugar. Add eggs and vanilla extract; mix until smooth.
- Stir in cocoa powder, flour, salt, and baking powder until just combined.
- Pour the batter into the prepared pan and bake for 20–25 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
- For the mint layer, beat softened butter until creamy. Gradually add powdered sugar, milk, and peppermint extract, and mix until smooth. Add green food coloring if using.
- Spread mint frosting evenly over the cooled brownies. Chill in the refrigerator for 30 minutes.
- For the ganache, heat heavy cream until just boiling and pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
- Pour ganache over the mint layer and spread evenly. Chill again until the ganache is set.
- Cut into squares and serve.
Notes
- You can use mint extract instead of peppermint for a milder flavor.
- Chill brownies before slicing for cleaner cuts.
- Store in the refrigerator for up to 5 days.
