- 13.8 ounces refrigerated pizza dough, 1 tube or about 390 grams
- 1/2 cup pizza sauce
- 1 1/4 cups low-moisture part-skim mozzarella cheese, shredded
- 3/4 cup diced turkey pepperoni
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes, optional
Instructions
- Preheat the oven to 375°F and lightly brush a 24 cup mini muffin tin with olive oil.
- In a small bowl, stir together the pizza sauce and Italian seasoning.
- Roll out the pizza dough lightly and cut it into 24 small circles. Press each circle into the mini muffin tin cups.
- Spoon about 1 teaspoon of seasoned sauce into each dough cup.
- Top each cup with a small pinch of shredded mozzarella and a few pieces of diced turkey pepperoni. Sprinkle with red pepper flakes if using.
- Bake for 11 to 13 minutes, or until the cheese is melted and lightly golden and the dough edges are browned.
- Let the bites rest in the pan for 3 to 5 minutes, then carefully remove and serve warm.
Notes
- Use only a small amount of sauce in each bite to keep the centers from getting soggy.
- Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
- These can be refrigerated for up to 3 days or frozen for up to 2 months.
- Reheat in a 350°F oven or air fryer for the best texture.
