Ingredients

Scale

Lasagna Noodles

  • 12 sheets

Ground Beef

  • 1 lb (450 g)

Black Beans

  • 1 can (15 oz)

Mexican Cheese Blend

  • 2 cups

Enchilada Sauce

  • 2 cups

Onion

  • 1 medium, diced

Bell Peppers

  • 1 medium, diced

Spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for your delicious lasagna.
  2. Cook the Meat: In a skillet, brown the ground beef over medium heat until fully cooked, then drain excess fat.
  3. Sauté the Vegetables: Add diced onions and bell peppers to the skillet with the beef and sauté until they are soft and fragrant.
  4. Mix in Beans and Spices: Stir in the black beans, enchilada sauce, and spices, allowing the mixture to simmer for a few minutes.
  5. Layer the Lasagna: In a baking dish, start layering by spreading a thin layer of the meat mixture, followed by noodles, cheese, and repeat until all ingredients are used, finishing with cheese on top.
  6. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Notes

  • Don’t Overcook the Noodles: Slightly undercooking the noodles will help them absorb the sauce without becoming mushy.
  • Let it Rest: Allow the lasagna to sit for about 10 minutes before serving to help it set.
  • Experiment with Spices: Feel free to adjust the spice levels according to your family’s taste preferences.
  • Use Fresh Ingredients: Fresh spices and quality ingredients will significantly enhance the overall flavor.
  • Store Leftovers Properly: Keep leftover lasagna in an airtight container to maintain freshness.
