Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine melted butter, minced garlic, thyme, rosemary, salt, and pepper.
- Add the halved potatoes to the bowl and toss to coat evenly with the butter mixture.
- Arrange the potatoes cut-side down on a baking sheet in a single layer.
- Roast in the preheated oven for 35-40 minutes, until golden brown and tender.
- Remove from oven and sprinkle with chopped fresh parsley if desired.
- Serve immediately and enjoy the tender, flavorful potatoes.
