Description

Melt in Your Mouth Potatoes are crispy on the outside and tender on the inside, roasted to perfection with garlic, herbs, and butter for a flavorful side dish.


Ingredients

  • 2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine melted butter, minced garlic, thyme, rosemary, salt, and pepper.
  3. Add the halved potatoes to the bowl and toss to coat evenly with the butter mixture.
  4. Arrange the potatoes cut-side down on a baking sheet in a single layer.
  5. Roast in the preheated oven for 35-40 minutes, until golden brown and tender.
  6. Remove from oven and sprinkle with chopped fresh parsley if desired.
  7. Serve immediately and enjoy the tender, flavorful potatoes.
