- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and cayenne pepper. Whisk to combine.
- Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and marinate in the fridge for at least 30 minutes, or up to 2 hours.
- In a small bowl, mix together the Parmesan cheese and breadcrumbs.
- Remove the chicken from the marinade and coat each piece with the breadcrumb mixture, pressing down to ensure the coating sticks.
- Place the coated chicken on a baking sheet lined with parchment paper or lightly greased. Bake for 25-30 minutes, or until the chicken is cooked through and golden on top.
- Serve hot with a side of vegetables or mashed potatoes for a complete meal.
Notes
- For extra flavor, you can add a drizzle of honey over the chicken before baking.
- Make sure to not overcook the chicken to maintain its tenderness.
- You can use bone-in chicken pieces, but adjust the cooking time accordingly.
