- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1/2 cup cherry tomatoes, halved
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese (optional)
- 1 tbsp lemon juice
Instructions
- Heat the olive oil in a large skillet or frying pan over medium heat.
- Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
- Add the diced onion and garlic to the skillet and cook for an additional 2-3 minutes, until softened and fragrant.
- Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for 4-5 minutes, until the vegetables are tender but still slightly crisp.
- Add the oregano, cumin, paprika, salt, and black pepper. Stir well to coat the beef and vegetables with the spices.
- Cook for another 2-3 minutes to allow the flavors to meld together.
- Remove from heat and stir in the fresh parsley and lemon juice.
- If desired, sprinkle with crumbled feta cheese before serving.
- Serve warm, either on its own or with rice, couscous, or pita bread.
Notes
- For extra heat, you can add a pinch of red pepper flakes or cayenne pepper.
- If you want a lower-fat version, you can use lean ground turkey or chicken instead of beef.
- This dish can be made ahead and stored in the fridge for up to 3 days, making it great for meal prep.
