Description

A flavorful and quick stir fry with ground beef, Mediterranean spices, and vegetables, perfect for a healthy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tbsp lemon juice

Instructions

  1. Heat the olive oil in a large skillet or frying pan over medium heat.
  2. Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Add the diced onion and garlic to the skillet and cook for an additional 2-3 minutes, until softened and fragrant.
  4. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for 4-5 minutes, until the vegetables are tender but still slightly crisp.
  5. Add the oregano, cumin, paprika, salt, and black pepper. Stir well to coat the beef and vegetables with the spices.
  6. Cook for another 2-3 minutes to allow the flavors to meld together.
  7. Remove from heat and stir in the fresh parsley and lemon juice.
  8. If desired, sprinkle with crumbled feta cheese before serving.
  9. Serve warm, either on its own or with rice, couscous, or pita bread.

Notes

  • For extra heat, you can add a pinch of red pepper flakes or cayenne pepper.
  • If you want a lower-fat version, you can use lean ground turkey or chicken instead of beef.
  • This dish can be made ahead and stored in the fridge for up to 3 days, making it great for meal prep.
