- 1 cup fine bulgur
- 2 medium tomatoes (diced)
- 1/2 cup fresh parsley (chopped)
- 1/4 cup fresh mint (chopped)
- 1/4 cup green onions (chopped)
- 1/4 cup olive oil
- 2 tablespoons pomegranate molasses
- 1 tablespoon lemon juice
- Salt and pepper (to taste)
Instructions
- In a large bowl, combine the fine bulgur with boiling water. Cover the bowl and let it sit for 10-15 minutes, until the bulgur has absorbed the water and softened.
- Fluff the bulgur with a fork to separate the grains, and let it cool.
- Once the bulgur has cooled, add the diced tomatoes, chopped parsley, mint, and green onions to the bowl.
- In a small bowl, whisk together the olive oil, pomegranate molasses, lemon juice, salt, and pepper.
- Pour the dressing over the bulgur mixture and toss gently to combine.
- Serve immediately or let it sit in the fridge for a few hours to allow the flavors to meld together. Enjoy!
Notes
- For extra flavor, drizzle a little more olive oil or sprinkle crumbled feta cheese on top before serving.
