Description

This Mediterranean Bulgur Salad (Kisir) is a light, refreshing, and nutritious dish made with bulgur, fresh tomatoes, herbs, and a tangy dressing. It’s perfect as a side dish or a light meal.


Ingredients

  • 1 cup fine bulgur
  • 2 medium tomatoes (diced)
  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup green onions (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon lemon juice
  • Salt and pepper (to taste)


Instructions

  1. In a large bowl, combine the fine bulgur with boiling water. Cover the bowl and let it sit for 10-15 minutes, until the bulgur has absorbed the water and softened.
  2. Fluff the bulgur with a fork to separate the grains, and let it cool.
  3. Once the bulgur has cooled, add the diced tomatoes, chopped parsley, mint, and green onions to the bowl.
  4. In a small bowl, whisk together the olive oil, pomegranate molasses, lemon juice, salt, and pepper.
  5. Pour the dressing over the bulgur mixture and toss gently to combine.
  6. Serve immediately or let it sit in the fridge for a few hours to allow the flavors to meld together. Enjoy!

Notes

  • For extra flavor, drizzle a little more olive oil or sprinkle crumbled feta cheese on top before serving.
