Description
Mediterranean Beef Kabobs are juicy, flavorful skewers made with marinated beef, grilled to perfection, and served with a side of fresh vegetables and pita.

- 1 1/2 lbs beef sirloin or flank steak, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 red onion, cut into chunks
- 1 bell pepper, cut into chunks
- 1 zucchini, cut into rounds
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, cumin, paprika, salt, and pepper.
- Add beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated beef, onion, bell pepper, and zucchini onto skewers, alternating between meat and vegetables.
- Grill the kabobs for 8-10 minutes, turning occasionally, until the beef reaches your desired level of doneness.
- Remove from the grill and let rest for a few minutes before serving.
- Garnish with fresh chopped parsley and serve with pita bread or a side of Greek yogurt.
Notes
- For extra flavor, brush the kabobs with more olive oil or lemon juice while grilling.
- Serve with a side of couscous or a fresh Mediterranean salad for a complete meal.
