- 2 large croissants, split
- 4 large eggs
- 2 tbsp milk (dairy or plant-based)
- 4 strips of bacon
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp butter
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat a skillet over medium heat. Cook the bacon strips until crispy, about 3-4 minutes per side. Set aside on a paper towel to drain excess fat.
- In a small bowl, whisk together the maple syrup and Dijon mustard. Set aside.
- In another bowl, whisk the eggs with milk, salt, and pepper until smooth.
- In the same skillet, melt the butter over medium heat. Pour in the eggs and scramble them gently, cooking until fully set but still soft, about 2-3 minutes.
- To assemble the sandwich, spread the maple mustard sauce on the inside of the croissant halves. Layer one croissant half with scrambled eggs, then top with bacon strips.
- Place the other croissant half on top, and garnish with fresh herbs if desired. Serve immediately.
Notes
- Feel free to swap the bacon for sausage or avocado for a different twist.
- You can also toast the croissants for added crunch before assembling the sandwich.
- This sandwich pairs well with a side of fresh fruit or a hot cup of coffee.
