Description

Maple Mustard Croissant Breakfast Sandwich is a delicious and savory breakfast option, featuring a flaky croissant filled with scrambled eggs, crispy bacon, and a sweet yet tangy maple mustard sauce.


Ingredients

  • 2 large croissants, split
  • 4 large eggs
  • 2 tbsp milk (dairy or plant-based)
  • 4 strips of bacon
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat a skillet over medium heat. Cook the bacon strips until crispy, about 3-4 minutes per side. Set aside on a paper towel to drain excess fat.
  2. In a small bowl, whisk together the maple syrup and Dijon mustard. Set aside.
  3. In another bowl, whisk the eggs with milk, salt, and pepper until smooth.
  4. In the same skillet, melt the butter over medium heat. Pour in the eggs and scramble them gently, cooking until fully set but still soft, about 2-3 minutes.
  5. To assemble the sandwich, spread the maple mustard sauce on the inside of the croissant halves. Layer one croissant half with scrambled eggs, then top with bacon strips.
  6. Place the other croissant half on top, and garnish with fresh herbs if desired. Serve immediately.

Notes

  • Feel free to swap the bacon for sausage or avocado for a different twist.
  • You can also toast the croissants for added crunch before assembling the sandwich.
  • This sandwich pairs well with a side of fresh fruit or a hot cup of coffee.
