Description

Malaysian Tomato Rice is a flavorful dish made with rice cooked in a tangy tomato base, infused with spices like cumin and cinnamon, and served with aromatic herbs.


Ingredients

  • 1 cup Basmati rice
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 cups vegetable broth or water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add cumin seeds, cinnamon stick, and bay leaf, and sauté until fragrant.
  3. Add the chopped onions, garlic, and ginger. Cook until the onions become translucent.
  4. Stir in the chopped tomatoes, turmeric powder, and chili powder. Cook until the tomatoes soften and the mixture becomes thick.
  5. Add the rinsed rice to the pan and stir to coat it in the tomato mixture.
  6. Pour in the vegetable broth or water, add salt to taste, and bring it to a boil.
  7. Reduce the heat, cover the pan, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

  • You can add vegetables like peas or carrots for extra flavor and nutrition.
  • For a spicier version, increase the amount of chili powder.
  • Serve with a side of raita or a cucumber salad for a complete meal.
