Description

A tall deli style loaded chicken club sandwich stacked with juicy grilled chicken, crispy bacon, melted cheddar cheese, fresh lettuce, tomato, and creamy mayonnaise between golden toasted bread slices.


Ingredients

  • 500 grams boneless skinless chicken thighs
  • 12 slices sandwich bread
  • 8 bacon strips
  • 4 cheddar cheese slices
  • 4 large fresh lettuce leaves
  • 1 large tomato, sliced
  • 1/2 cup mayonnaise, about 120 grams
  • 1 tablespoon olive oil, about 15 milliliters
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper


Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Season the chicken thighs with salt and black pepper.
  3. Cook the chicken for 5 to 6 minutes per side until golden and fully cooked, then remove and let rest before slicing.
  4. In the same skillet, cook the bacon until crisp, then transfer to a rack or paper towel to drain.
  5. Toast the sandwich bread slices until golden and slightly crisp.
  6. Spread mayonnaise evenly on each slice of toasted bread.
  7. Layer sliced chicken, cheddar cheese, bacon, lettuce, and tomato between three slices of bread to form each club sandwich.
  8. Cut each sandwich into halves or quarters and serve immediately.
