Description

A hearty and nutritious loaded breakfast bowl packed with eggs, potatoes, vegetables, and your choice of toppings, perfect for a filling start to the day.


Ingredients

  • 2 large eggs
  • 1 cup diced potatoes
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions
  • 2 slices cooked bacon or vegetarian alternative
  • 1/4 avocado, sliced (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook for 8–10 minutes until golden and tender.
  2. Add chopped bell peppers and onions to the skillet and sauté for 3–4 minutes until soft.
  3. In a separate pan, scramble or fry the eggs as desired. Season with salt and pepper.
  4. Layer the potatoes and vegetables into a bowl, top with cooked eggs.
  5. Add shredded cheese, bacon or vegetarian alternative, green onions, and avocado slices if using.
  6. Serve immediately while hot.

Notes

  • Swap bacon with tofu or tempeh for a vegetarian version.
  • Use sweet potatoes for a healthier alternative.
