Light pesto pasta with grilled chicken and fresh broccoli, topped with Parmesan cheese and a flavorful pesto sauce.


Ingredients

  • 1 pound penne pasta
  • 2 large chicken breasts
  • 1 cup broccoli florets
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • 1/4 cup Parmesan cheese, grated
  • 2 garlic cloves, minced


Instructions

  1. Boil the pasta in salted water, then drain and set aside
  2. Heat olive oil in a grill pan or skillet over medium heat, season the chicken with salt, pepper, and garlic
  3. Grill or sear the chicken on both sides until golden brown, then slice thinly
  4. Steam the broccoli for about 2-3 minutes until tender but still crisp
  5. Toss the pasta with the pesto sauce, then add the chicken and broccoli
  6. Sprinkle with Parmesan cheese and serve warm

Notes

  • Use al dente pasta for the best texture
  • Grill or sear the chicken to get a nice crust
  • Don’t overcook the broccoli
