Light pesto pasta with grilled chicken and fresh broccoli, topped with Parmesan cheese and a flavorful pesto sauce.

- 1 pound penne pasta
- 2 large chicken breasts
- 1 cup broccoli florets
- 1/2 cup pesto sauce
- 2 tablespoons olive oil
- 1/4 cup Parmesan cheese, grated
- 2 garlic cloves, minced
Instructions
- Boil the pasta in salted water, then drain and set aside
- Heat olive oil in a grill pan or skillet over medium heat, season the chicken with salt, pepper, and garlic
- Grill or sear the chicken on both sides until golden brown, then slice thinly
- Steam the broccoli for about 2-3 minutes until tender but still crisp
- Toss the pasta with the pesto sauce, then add the chicken and broccoli
- Sprinkle with Parmesan cheese and serve warm
Notes
- Use al dente pasta for the best texture
- Grill or sear the chicken to get a nice crust
- Don’t overcook the broccoli
