Description

Soft and fluffy lemon pikelets with a light citrus flavor, golden edges, and tender centers. Perfect for breakfast or afternoon tea, topped with cream and jam for a bright and comforting treat.


Ingredients

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh lemon zest
  • 1 tablespoon fresh lemon juice


Instructions

  1. Heat a nonstick skillet over medium low heat and lightly grease it.
  2. In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk milk, egg, melted butter, lemon zest, and lemon juice until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  5. Let the batter rest for 5 to 10 minutes.
  6. Spoon small rounds of batter onto the skillet.
  7. Cook for 2 to 3 minutes until bubbles form on the surface, then flip and cook another 1 to 2 minutes until golden brown.
  8. Transfer to a plate and repeat with remaining batter.
  9. Serve warm with jam, cream, or fresh lemon if desired.

Notes

  • Do not overmix the batter to keep pikelets light and fluffy.
  • Cook on medium low heat to prevent overbrowning.
  • Fresh lemon zest provides the brightest flavor.
  • Store leftovers in an airtight container for up to 2 days.
