- 3/4 cup milk
- 1 large egg

- 1 tablespoon fresh lemon juice
Instructions
- Heat a nonstick skillet over medium low heat and lightly grease it.
- In a mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate bowl, whisk milk, egg, melted butter, lemon zest, and lemon juice until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
- Let the batter rest for 5 to 10 minutes.
- Spoon small rounds of batter onto the skillet.
- Cook for 2 to 3 minutes until bubbles form on the surface, then flip and cook another 1 to 2 minutes until golden brown.
- Transfer to a plate and repeat with remaining batter.
- Serve warm with jam, cream, or fresh lemon if desired.
Notes
- Do not overmix the batter to keep pikelets light and fluffy.
- Cook on medium low heat to prevent overbrowning.
