Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 1 cup lemon curd
  • 4 egg whites
  • 1/2 cup sugar (for meringue)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan to form crust.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, lemon juice, and zest. Pour over crust.
  3. Bake for 50-60 minutes or until center is set. Cool, then spread lemon curd on top.
  4. Whip egg whites to soft peaks, gradually adding sugar until stiff. Spread meringue over cheesecake.
  5. Broil or torch meringue until golden. Chill before serving.

Notes

  • Use a water bath to prevent cracking.

  • Serve chilled with extra lemon zest on top.
