- ½ teaspoon powdered whole leaf stevia
- 16 drops lime essential oil
- 6 egg whites, room temperature
- Zest of 1 lime
Instructions
- Chill a mixing bowl and beaters in the freezer for 10 minutes. Allow egg whites to come to room temperature.
- In the chilled bowl, whip heavy cream with stevia until soft peaks form. Add lime essential oil and gently mix.
- In a separate clean, dry bowl, whip egg whites to stiff peaks.
- Gently fold the whipped egg whites into the whipped lime cream using a spatula in batches, keeping the mixture airy.
- Spoon mousse into serving cups and top with lime zest.
- Chill for at least 30 minutes before serving for best texture and flavor.
