Soft and golden keto cinnamon cream cheese bites filled with a rich, creamy cinnamon center and made with almond flour for a low carb, perfectly sweet treat.

- 2 cups almond flour
- 8 ounces cream cheese, softened
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1/3 cup granulated low carb sweetener
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a bowl, combine almond flour, baking powder, salt, and half of the granulated low carb sweetener.
- In a separate bowl, beat softened cream cheese, remaining sweetener, ground cinnamon, and vanilla extract until smooth.
- Add eggs and melted butter to the dry ingredients and mix until a soft dough forms.
- Scoop small portions of dough and flatten slightly. Place a small spoonful of the cream cheese mixture in the center and gently wrap the dough around it to form bite sized rolls.
- Place on the prepared baking sheet and bake for 15 to 18 minutes until lightly golden.
- Allow to cool for 5 minutes before serving so the filling sets slightly.
Notes
- Use room temperature cream cheese for a smooth filling.
- Do not overbake to keep the bites soft and tender.
- Store in an airtight container in the refrigerator for up to four days.
- Reheat gently in the oven to refresh texture.
