Description

Soft and golden keto cinnamon cream cheese bites filled with a rich, creamy cinnamon center and made with almond flour for a low carb, perfectly sweet treat.


Ingredients

  • 2 cups almond flour
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1/3 cup granulated low carb sweetener
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, baking powder, salt, and half of the granulated low carb sweetener.
  3. In a separate bowl, beat softened cream cheese, remaining sweetener, ground cinnamon, and vanilla extract until smooth.
  4. Add eggs and melted butter to the dry ingredients and mix until a soft dough forms.
  5. Scoop small portions of dough and flatten slightly. Place a small spoonful of the cream cheese mixture in the center and gently wrap the dough around it to form bite sized rolls.
  6. Place on the prepared baking sheet and bake for 15 to 18 minutes until lightly golden.
  7. Allow to cool for 5 minutes before serving so the filling sets slightly.

Notes

  • Use room temperature cream cheese for a smooth filling.
  • Do not overbake to keep the bites soft and tender.
  • Store in an airtight container in the refrigerator for up to four days.
  • Reheat gently in the oven to refresh texture.
