- 1 box Jiffy Corn Muffin Mix
- 1 large egg
- 1/3 cup milk
- 1 pound ground beef
- 1 packet taco seasoning
- 3/4 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup canned corn, drained
- 1/2 cup black beans, drained and rinsed (optional)
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C) and grease an 8×8-inch baking dish.
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add taco seasoning and salsa to the beef. Stir and simmer for 5 minutes.
- In a bowl, combine Jiffy mix, egg, and milk. Stir until just combined.
- Spread the beef mixture evenly in the prepared baking dish.
- Top with sour cream, then sprinkle with corn, black beans (if using), and shredded cheese.
- Pour and spread the cornbread batter evenly over the top.
- Bake for 20-25 minutes, or until the cornbread is golden and a toothpick inserted in the center comes out clean.
- Let cool slightly before serving.
Notes
- Top with diced tomatoes, green onions, or jalapeños for extra flavor.
- Use ground turkey or chicken as a lighter alternative to beef.
- Leftovers can be refrigerated for up to 3 days.
