Description

A hearty and flavorful classic featuring juicy Italian sausage, sweet bell peppers, and tender onions all cooked to perfection in one skillet. Ideal for weeknight dinners or casual gatherings.

Ingredients

  • Italian Sausages: 5–6 links (about 1.5 pounds)
  • Bell Peppers: 3 large (1 red, 1 yellow, 1 green), sliced
  • Yellow Onions: 2 medium, sliced
  • Garlic Cloves: 3, minced
  • Olive Oil: 2 tablespoons
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Dried Oregano: 1 teaspoon
  • Crushed Red Pepper Flakes: ¼ teaspoon (optional)
  • Chicken Broth or Water: ¼ cup

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium heat. Add 1 tablespoon of olive oil.
  2. Combine Ingredients: Add sausages to the skillet. Brown them on all sides for about 8–10 minutes, then remove and set aside.
  3. Prepare Your Cooking Vessel: In the same skillet, add another tablespoon of olive oil. Toss in the sliced onions and bell peppers. Sauté for 5–7 minutes until softened.
  4. Assemble the Dish: Stir in minced garlic, salt, black pepper, oregano, and red pepper flakes if using. Cook for 1 minute until fragrant.
  5. Cook to Perfection: Return the sausages to the skillet. Add chicken broth. Cover and cook for 10–12 minutes on low heat until sausages are fully cooked and flavors meld.
  6. Finishing Touches: Uncover and increase heat to medium-high. Cook for 2–3 more minutes to reduce any liquid and give everything a beautiful glaze.
  7. Serve and Enjoy: Serve hot with crusty rolls, over rice, or alongside roasted potatoes.

Notes

  • Slice peppers lengthwise for a more elegant presentation.
  • Use a splash of balsamic vinegar at the end for a sweet tang.
  • Leftovers can be used in pasta, pizza, or breakfast dishes.
