  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 2 medium zucchinis, sliced into half-moons
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–7 minutes until golden and fully cooked. Remove and set aside.
  3. In the same skillet, add remaining olive oil and sauté mushrooms for 3–4 minutes until they begin to brown.
  4. Add zucchini and cook for another 3 minutes until tender-crisp.
  5. Stir in garlic and red pepper flakes, cooking for 1 minute until fragrant.
  6. Pour in chicken broth and bring to a simmer. Cook for 2–3 minutes to let flavors combine.
  7. Return chicken to the skillet and toss with vegetables.
  8. Sprinkle with Parmesan cheese and stir until lightly melted.
  9. Garnish with fresh parsley and serve hot.
