- 1 cup all-purpose flour
- 1 tablespoon sugar

- 1/4 teaspoon Cajun or Creole seasoning

- 1/2 cup milk
- 1/2 tablespoon white vinegar
- 2 tablespoons vegetable oil
- 1 egg
- 3 tablespoons grated onion
- Oil for frying (canola, vegetable, or peanut)
Instructions
- Heat frying oil in a deep pot to 350°F. Line a plate with paper towels for draining.
- In a large bowl, mix together cornmeal, flour, sugar, baking soda, baking powder, Cajun seasoning, and salt.
- In another bowl, whisk milk, vinegar, vegetable oil, egg, and grated onion.
- Combine wet and dry ingredients, stirring gently until just mixed. Do not overmix.
- Using a small scoop or spoon, drop batter into the hot oil, a few at a time, to avoid crowding.
- Fry 2–3 minutes or until golden brown, turning as needed.
- Remove hush puppies and drain on paper towels or a wire rack.
- Serve warm with dipping sauce of choice.
Notes
- Keep oil at a consistent 350°F for even frying.
- Use a small scoop to ensure uniform size and even cooking.
- If the batter thickens while sitting, add a tablespoon of milk to loosen it.
