Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, egg, melted butter, vanilla extract, and maple syrup.
- Combine wet and dry ingredients until just mixed; do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour small rounds of batter (about 3 inches in diameter) onto the skillet.
- Cook pancakes until bubbles form on the surface, then flip and cook until golden brown.
- Brush cooked pancakes lightly with maple syrup.
- Cook sausage patties in a separate pan until browned and cooked through.
- In another pan, cook eggs to your preference (fried, scrambled, or folded).
- To assemble, place a sausage patty and a slice of cheese on one pancake, top with an egg, then cover with another pancake to form a sandwich.
- Serve immediately while warm.
