Description

Ingredients

  • 1 tablespoon sugar

  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup (plus extra for brushing)
  • 4 breakfast sausage patties
  • 4 slices American cheese
  • 4 large eggs
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix buttermilk, egg, melted butter, vanilla extract, and maple syrup.
  3. Combine wet and dry ingredients until just mixed; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour small rounds of batter (about 3 inches in diameter) onto the skillet.
  6. Cook pancakes until bubbles form on the surface, then flip and cook until golden brown.
  7. Brush cooked pancakes lightly with maple syrup.
  8. Cook sausage patties in a separate pan until browned and cooked through.
  9. In another pan, cook eggs to your preference (fried, scrambled, or folded).
  10. To assemble, place a sausage patty and a slice of cheese on one pancake, top with an egg, then cover with another pancake to form a sandwich.
  11. Serve immediately while warm.
