Crispy and flavorful homemade KFC-style chicken made right in your oven with a secret blend of herbs and spices.

- 8 pieces of chicken (drumsticks or thighs)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp ground ginger
- 1/2 tsp white pepper
- 1/2 tsp chili powder (optional)
- Cooking spray or a few tbsp of vegetable oil
Instructions
- Marinate the chicken in buttermilk for at least 2 hours, preferably overnight.
- Preheat your oven to 400°F (200°C). Place a wire rack over a baking sheet and lightly grease it.
- In a large bowl, combine flour with all the spices and herbs.
- Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour, pressing firmly to coat.
- Place coated chicken pieces on the prepared rack. Lightly spray with cooking spray or brush with a little oil.
- Bake for 40–45 minutes, turning halfway through, until golden and cooked through.
- Let rest for 5 minutes before serving.
Notes
- For extra crispiness, double coat the chicken by dipping it back into the buttermilk and flour mixture.
- Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
- Line the tray with foil for easier cleanup.
