Hobo Casserole is a comforting one-pot meal packed with seasoned ground beef, potatoes, and vegetables, all baked together to create a hearty and satisfying dish.

- 1 lb ground beef
- 4 medium potatoes, peeled and sliced thinly
- 1 onion, chopped
- 1 cup frozen mixed vegetables
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 tablespoon olive oil (for browning beef)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat and brown the ground beef with onions, garlic powder, onion powder, thyme, salt, and pepper. Drain excess fat.
- In a bowl, combine cream of mushroom soup and milk, stirring until smooth.
- Layer the sliced potatoes in the bottom of the prepared baking dish. Top with half of the cooked beef mixture, followed by half of the mixed vegetables.
- Repeat the layers with the remaining beef and vegetables, then pour the soup mixture over the top.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and sprinkle shredded cheddar cheese over the casserole. Return to the oven for another 10 minutes, or until cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
- For a variation, you can add sliced bell peppers or swap the mixed vegetables for your favorite veggies.
- If you like a crispy topping, sprinkle some breadcrumbs on top before baking.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
