Description

A bold and satisfying high protein bowl made with lean ground beef glazed in sweet and spicy hot honey, roasted sweet potatoes, creamy avocado, and a cool Greek yogurt topping. Perfect for meal prep or a flavorful weeknight dinner.


Ingredients

  • 1 pound lean ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 1 ripe avocado, sliced
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon hot sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a sheet pan with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, smoked paprika, half of the salt, and black pepper until evenly coated.
  3. Spread sweet potatoes evenly on the sheet pan and roast for 20 to 25 minutes until tender and lightly caramelized.
  4. While the potatoes roast, heat a large skillet over medium heat and add the ground beef. Cook until browned, breaking it up as it cooks.
  5. Season the beef with garlic powder and the remaining salt, stirring well.
  6. In a small bowl mix honey and hot sauce, then pour over the cooked beef. Simmer for 2 to 3 minutes until slightly thickened and glossy.
  7. Stir Greek yogurt in a small bowl until smooth.
  8. Assemble bowls with roasted sweet potatoes and hot honey beef, then top with sliced avocado and a spoonful of Greek yogurt before serving.

Notes

  • Do not overcrowd the sweet potatoes on the pan for better caramelization.
  • Adjust the amount of hot sauce to control spice level.
  • Add avocado just before serving to keep it fresh.
  • Store components separately in the refrigerator for up to 4 days.
