Description

Soft, high protein cottage cheese gnocchi made with simple ingredients and tossed in vibrant green pesto.


Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 3/4 cup prepared green pesto
  • 1/4 cup grated parmesan cheese


Instructions

  1. Bring a large pot of salted water to a gentle boil.
  2. Blend cottage cheese until smooth.
  3. Mix blended cottage cheese with egg, flour, and salt to form a dough.
  4. Lightly flour a surface and shape dough into ropes.
  5. Cut into bite-sized gnocchi pieces.
  6. Boil gnocchi until they float, about 2 minutes.
  7. Toss hot gnocchi with prepared pesto.
  8. Top with grated parmesan if desired and serve.
