- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon salt
- 3/4 cup prepared green pesto
- 1/4 cup grated parmesan cheese
Instructions
- Bring a large pot of salted water to a gentle boil.
- Blend cottage cheese until smooth.
- Mix blended cottage cheese with egg, flour, and salt to form a dough.
- Lightly flour a surface and shape dough into ropes.
- Cut into bite-sized gnocchi pieces.
- Boil gnocchi until they float, about 2 minutes.
- Toss hot gnocchi with prepared pesto.
- Top with grated parmesan if desired and serve.
Notes
- Do not overwork the dough.
- Cook gnocchi in batches.
- Add extra pesto if needed when reheating.
