Description

A rich and hearty Hidden Veggie Bolognese made with finely chopped vegetables, ground meat, and tomato sauce, served over tagliatelle pasta.


Ingredients

  • 12 ounces (340 g) tagliatelle pasta
  • 1 pound (450 g) ground meat
  • 1 medium carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 oz / 411 g) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • ½ cup (50 g) freshly grated parmesan cheese
  • 2 tablespoons fresh herbs (parsley or basil)


Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Sauté carrots, celery, and onions until soft, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add ground meat and cook until browned.
  5. Stir in diced tomatoes and tomato paste, reduce heat, and simmer for 15-20 minutes until thickened.
  6. Season with salt and pepper to taste and stir in fresh herbs.
  7. Cook tagliatelle pasta according to package instructions and drain.
  8. Toss pasta with Bolognese sauce and serve topped with freshly grated parmesan cheese.
