Description
A rich and hearty Hidden Veggie Bolognese made with finely chopped vegetables, ground meat, and tomato sauce, served over tagliatelle pasta.

- 12 ounces (340 g) tagliatelle pasta
- 1 pound (450 g) ground meat
- 1 medium carrot, finely chopped
- 1 stalk celery, finely chopped
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14.5 oz / 411 g) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- ½ cup (50 g) freshly grated parmesan cheese
- 2 tablespoons fresh herbs (parsley or basil)
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Sauté carrots, celery, and onions until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add ground meat and cook until browned.
- Stir in diced tomatoes and tomato paste, reduce heat, and simmer for 15-20 minutes until thickened.
- Season with salt and pepper to taste and stir in fresh herbs.
- Cook tagliatelle pasta according to package instructions and drain.
- Toss pasta with Bolognese sauce and serve topped with freshly grated parmesan cheese.

- Simmer the sauce slowly to develop deeper flavors.
- Finely chop vegetables to blend seamlessly with the meat.
