Description

Healthy Ground Chicken Meatloaf is a lean and nutritious alternative to traditional meatloaf, made with ground chicken and packed with flavor from herbs and vegetables.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (whole wheat for a healthier option)
  • 1/4 cup grated zucchini
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup tomato sauce (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, zucchini, onion, bell pepper, garlic, egg, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Transfer the mixture to the prepared loaf pan and shape into a loaf.
  4. Spread the tomato sauce over the top of the meatloaf.
  5. Bake for 40-45 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

  • For added moisture, you can mix in 1/4 cup of finely chopped spinach or grated carrots.
  • If you prefer a more savory topping, replace the tomato sauce with a mixture of mustard and honey.
  • Serve with a side of roasted vegetables or mashed sweet potatoes for a complete meal.
