- 1 pound ground chicken
- 1/2 cup breadcrumbs (whole wheat for a healthier option)
- 1/4 cup grated zucchini
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup tomato sauce (for topping)
Instructions
- Preheat the oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, zucchini, onion, bell pepper, garlic, egg, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Transfer the mixture to the prepared loaf pan and shape into a loaf.
- Spread the tomato sauce over the top of the meatloaf.
- Bake for 40-45 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
- Let the meatloaf rest for 5-10 minutes before slicing and serving.
Notes
- For added moisture, you can mix in 1/4 cup of finely chopped spinach or grated carrots.
- If you prefer a more savory topping, replace the tomato sauce with a mixture of mustard and honey.
- Serve with a side of roasted vegetables or mashed sweet potatoes for a complete meal.
