- ¼ cup water
- ⅓ cup low sodium soy sauce, tamari, or coconut aminos
- 2 tablespoons honey or brown sugar
- 2 teaspoons sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh grated ginger or ½ teaspoon ground ginger
- 1 tablespoon cornstarch or tapioca starch dissolved in 1 tablespoon water
- 1–2 tablespoons olive oil
- ½ medium yellow onion, diced
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 cup chopped broccoli
- 1 cup shredded carrots
- 1 red bell pepper, diced
- Toppings: toasted panko, avocado, green onions, or sesame seeds
Instructions
- In a saucepan, combine rice, coconut milk, water, and 1 tsp salt. Bring to a boil, reduce heat, cover, and simmer until rice is tender and liquid absorbed, about 15–20 minutes.
- In a small bowl, whisk together soy sauce, honey, sesame oil, garlic powder, ginger, and dissolved cornstarch to make teriyaki sauce.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant.
- Add ground turkey and cook until browned and cooked through.
- Stir in broccoli, carrots, and red bell pepper, cooking until slightly tender.
- Pour teriyaki sauce over turkey and vegetables. Simmer until sauce thickens and coats ingredients evenly.
- Serve turkey and vegetables over coconut rice. Top with toasted panko, avocado slices, green onions, and sesame seeds.

- Prepare rice and turkey separately if making ahead to maintain texture.
