Description

This Ground Turkey Teriyaki Rice Bowl with Coconut Rice features fluffy coconut-infused rice topped with savory teriyaki ground turkey and crisp sautéed vegetables, garnished with avocado, toasted panko, green onions, and sesame seeds for a balanced, flavorful meal.

  • 1 teaspoon kosher salt
  • 1 (13.6 oz) can full-fat coconut milk (or 1¾ cups water)
  • ¼ cup water
  • ⅓ cup low sodium soy sauce, tamari, or coconut aminos
  • 2 tablespoons honey or brown sugar
  • 2 teaspoons sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh grated ginger or ½ teaspoon ground ginger
  • 1 tablespoon cornstarch or tapioca starch dissolved in 1 tablespoon water
  • 12 tablespoons olive oil
  • ½ medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground turkey
  • 1 cup chopped broccoli
  • 1 cup shredded carrots
  • 1 red bell pepper, diced
  • Toppings: toasted panko, avocado, green onions, or sesame seeds


Instructions

  1. In a saucepan, combine rice, coconut milk, water, and 1 tsp salt. Bring to a boil, reduce heat, cover, and simmer until rice is tender and liquid absorbed, about 15–20 minutes.
  2. In a small bowl, whisk together soy sauce, honey, sesame oil, garlic powder, ginger, and dissolved cornstarch to make teriyaki sauce.
  3. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant.
  4. Add ground turkey and cook until browned and cooked through.
  5. Stir in broccoli, carrots, and red bell pepper, cooking until slightly tender.
  6. Pour teriyaki sauce over turkey and vegetables. Simmer until sauce thickens and coats ingredients evenly.
  7. Serve turkey and vegetables over coconut rice. Top with toasted panko, avocado slices, green onions, and sesame seeds.
