Description

These Ground Beef Salsa Corn Roll Ups are loaded with seasoned beef, melted cheese, corn, and zesty salsa all wrapped in warm tortillas and baked to perfection. They’re quick, cheesy, and full of Tex-Mex flavor—perfect for snacks, parties, or easy dinners.


Ingredients

  • 1 pound ground beef
  • 4 ounces salsa (your favorite)
  • 1/2 cup shredded cheddar cheese (or Monterey Jack or pepper jack)
  • 1/2 cup frozen yellow corn
  • 68 wheat tortillas
  • Optional garnishes: sour cream, shredded lettuce, chopped tomatoes, black olives, avocado, guacamole, canned black beans (drained)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add salsa, shredded cheese, and corn to the beef. Stir until evenly mixed and cheese begins to melt.
  4. Warm tortillas slightly to make them flexible, then spoon 2–3 tablespoons of the filling down the center of each tortilla.
  5. Roll up tightly and place seam-side down on the prepared baking sheet.
  6. Bake for 10–12 minutes or until lightly crisp and golden.
  7. Remove from oven, cool slightly, and slice if desired. Serve with your favorite garnishes.

Notes

  • Drain cooked beef well to prevent soggy tortillas.
  • Warm tortillas before rolling to avoid tearing.
  • Brush roll ups with a little oil before baking for extra crispiness.
  • For added heat, use spicy salsa or add diced jalapeños.
