Description

Ingredients

  • 1 pound ground beef
  • 3 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil and sauté the chopped onion until soft.
  3. Add the minced garlic and cook briefly until fragrant.
  4. Add the ground beef and cook until fully browned, breaking it up as it cooks.
  5. Stir in the diced potatoes, salt, black pepper, dried thyme, and paprika.
  6. Pour in the beef broth and stir to combine.
  7. Bring the soup to a gentle boil, then reduce heat.
  8. Simmer uncovered for 25 to 30 minutes, until the potatoes are tender.
  9. Stir in the fresh parsley.
  10. Taste and adjust seasoning if needed.
  11. Serve hot.
